guest chef Ana Ortiz from Day Into Night Kitchen - 03/18/18
On the verge of Spring Equinox,
we hosted our guests for an homestead style event:
Maple tree tapping + maple syrup tasting, bites & drinks!.
Set at Smokey Belles Catskills Le Petite Cabine in Narrowsburg, NY. We learned how to identify sugar maple tree (Acer Saccharum) along with hands-on tapping old fashioned practices and simple sap boiling.
Our guests gathered…
by the stone open fire place in the 1950’ timber frame cabin, taking a first bite into our event with a maple syrup Oatmeal cookie while sipping on black Coffee or hot Toddy served in Furbelow & Bibelot utilitarian ceramics.
Healer Brenda Seldin founder of The Healing Energies guided us through an awareness circle around the outdoor fire. Through a short imagery journey we tuned our body to feel deeper the land & trees while opening all our senses for the discovery ahead.
The outdoor hands-on identifying & tapping activities, lead the small groups back around the large fire where collected sap had been boiling for days. Animated conversations aout maple water medicinal properties & local native American tribes usages were held, warmed by a hot cider infused with spices such as toasted peppercorn, all spices, cloves, coriander & cinnamon.
All snowy steps eventually lead back to the Alchemy shack to taste the delicate flavor of maple water & the amber variation of Smokey Belles maple syrups…
Warm bites served by the chef included:
Caramelized onion & Quiche gruyere with Carrots glazed in maple syrup with pistachio Salsa verde + house made Creme fraiche & Fennel citrus salad
Pouding chomeur & Maple toffee making over fresh snow!
